My Delicious Dinner

Flatout Herb Roasted Veggie Pizza

1 light Italian herb Flatout (I used light sun dried tomato)
1/2 C chopped artichokes
1/4 C red onion sliced
1/4 C mushrooms, sliced
1/4 C red bell pepper, sliced
1 clove garlic, minced
black pepper
olive oil cooking spray (i used regular)
1 tsp. olive oil
1/2 tsp. Mrs. Dash Garlic and Herb seasoning
3/4 C low-fat shredded mozzarella cheese
I also added 1/4 C diced tomatoes

Preheat oven to 400*  In a small bowl mix olive oil and mrs. dash; set aside.  In a separate bowl mix all the veggies and garlic.   spread the veggies out on a baking sheet.  Lightly spray with cooking spray and top with pepper.   Bake 11-17 minutes until veggies begin to carmalize.  Remove from oven and lower temp to 350*  Spread veggies evenly over Flatout bread.  Drizzle with the olive oil/ mrs dash mixture and then top with the cheese.   Bake 7-8 minutes until cheese is melted.

the entire piece has 280 calories, 13.9 g fat, 13g dietary fiber   Total of 6 points.

I found the Flat Out bread I think in the deli dept.  of my local grocery store.   It's in the area where they have the flavored wraps and flat breads.
