Chicken and Pasta Alfredo
Serves 6, 6pts (serving is about 1 ¼ cups)
¾ lb Whole wheat fusilli
¾ lb boneless, skinless chicken breasts
¾ teaspoon salt
¼ teaspoon pepper
1 cup fat free half and half
½ cup fat free milk
2 tablespoons flour
1/8 teaspoon nutmeg
2 tablespoons butter
2 garlc cloves minced
¼ cup parmesan/romano cheese
2 tablespoons chopped fresh parsley
1. Cook pasta according to the package
2. Sprinkle the chicken with ¼ teaspoon salt and 1/8 teaspoon pepper. Spray a pan with like Pam and set over med-high heat. Add the chicken and cook until cooked all the way through (5-6 min). Transfer to a cutting board and let cook before cutting into bite sized pieces
3. Combine the half and half, milk, flour, nutmeg and the remaining salt and peppers into a small bowl and whisk until blended.
4. Melt the butter in a pan and then add the garlic and cook until just golden (1 min). Whisk in the half and half mixture and stir constantly for 2-3 mins until it bubbles and thickens. Next add the chicken, pasta, and cheese. Stir until heated and then serve.
I also added in zucchini but that is because I wanted more veggies.
